In Gerson Therapy

The soup in the Gerson Therapy Diet is a vital component. The soup can be eaten on it’s own or used as a flavorful base for other vegetable dishes. You will love this soup, because you will soon discover the multitude of ways that you can use it, and incorporate it into every meal. Since you have given up salt, this soup along with lime adds just the right amount of zing so that you will no longer notice the missing salt.

Ingredients

1 medium celery knob (celeriac)

1-1/2 lbs tomatoes

1 medium parsley root (parsnip)

2 medium onions

1 lb potatoes

2 small leeks

A small bunch of parsley

*Garlic optional

Preparing the vegetables is rather simple. First wash them then chop them into large pieces, you do not need to  peel them. Combine ingredients in a gallon (4 quart) pot.   Cover with purified distilled water and allow to simmer slowly for approximately 2 hours. Once vegetables are cooked, put through food mill. Serve on its own or with a squeeze of lime to enhance the flavor.

 

HIPPOCRATES SOUP STOCK:

Combine the clean prepared vegetables that have been chopped into large pieces into a gallon (4-5 quart) pot. Cover with purified water. Allow to simmer slowly for about 3-4 hours, then strain the liquid into storage containers. Toss out the exhausted vegetables. This recipe makes about 4 quarts of soup stock (2 days worth). The stock can be frozen for future use.

 

CROCK POT VERSION

Place washed roughly chopped vegetables into your gallon crock pot. Fill  with water to max water level marker. Set the timer for 10 hours on low or 6 hours high depending on your schedule. When the soup is ready, ladle the clear broth into spill-proof quart containers. I usually get about 3 – 4 quarts from my efforts. The exhausted vegetables can be blitzed in a food processor and eaten like a mashed potatoes accompaniment.

The prep work takes me no more than 15 minutes and after that I’m free to do other things. I love this gem.
